Y2 – Day 289 – Lake Gregory

After spending one hour strolling around Lake Gregory, sandwiched between Crestline and Twin Peaks, we (Cindi and I) are hungry and feeling refreshed, renewed and restored, resting comfortably in our Treehouse. The attraction of Lake Gregory vs. Lake Arrowhead is the non-commercial and non-built up feel of this natural lake.  There are no docks, no boats allowed except kayaks and anyone can bring a fishing pole and linger by the shore.  Luckily, we are equidistant to both and have our pick of blue water, depending on our mood.

We brought some duck food and stayed close to shore so we could feed the fowl.  Two or three mallards got flustered as I threw pellets into the shallow water and flapped their wings angrily at each other, putting on a great show for us.  Around midway, we returned via the high trail inside the woods that encircle the lake like a ring of green.  When we arrived at 9am, I needed my jacket but soon the movement of walking and the sun warming the earth had me peeling it off, pockets full of keys, treats, phone and duck food.  I tied my black jacket around my waist and we moseyed along the paths ever so slowly and happily, just me and my dog. Cindi watching the action from the dappled shore.

Y2 – Day 276 – Hi Altitude Vegan Cook

Put on some spa music, a happy apron and join me as we savor a vegan comfort dish.

I started with organic everything and drove up the mountain.  Here, I was inspired.

Slice and dice celery, onion and zucchini.  Sauté with just a touch of organic olive oil spray on a non-toxic, non-stick pan over medium heat.  I used 2 celery stalks, 3/4 of a small onion and one small squash.

Stir and let cook covered till soft and translucent, then add, mushrooms, carrots, garlic, vegetable broth, concentrated veggie ‘better than bouillon’  and fresh herbs.  I had some Japanese mushrooms, I used three babyish (toddler), skinny carrots, 2 cloves and cilantro. I added about 1 and 1/2 cup of broth and 2 tsps. of concentrate.  You could add kale or spinach or any fresh or dried herb. Continue to simmer, covered.Then proceed to add cooked potatoes, rice or pasta if you want to create a one pot hearty and healthy meal.  I added vegan Italian gnocchi (potato pasta) and was satiated as the evening fell and the temperature cooled, overlooking pines, breezes and relishing the scenery, ambiance and quiet around me.True Italian, home cooking is simple, fresh and effortless.  Enjoy.  Buen Provecho.

Y2 – Day 269 – Weather

Can the weather stress you out?  Oh, yes it can.  I am living proof.

Can you control it? No, but you can move, or stay comfortable and find shelter.

I don’t care how much you like snow, last year, New Yorkers were done with the bitter cold.  And even if you were a dry heat lover and your ideal retirement weather was hot, you wouldn’t appreciate weeks of heat waves, would you?

Weather does affect people.  Statistically, there are less crimes committed during the winter and there’s always a spike in the summer.  The lack of sunshine in your life can depress you and you can slip and fall on ice but can I just vent here?  I love it cooler.  I love pines and clean air.  I love a grey, greenish morning.  I love it when it rains.  Heck, I am fascinated by downpours.

We are totally impacted by our environment.  If you love palm trees, dry heat, pastels and the desert – you are going to be semi-unhappy living in a cold, moist, rainforest – let’s say in Washington state.  If you adore sand between your toes, the sun shining on your body 24/7 and breezes, maybe you should look into moving to Hawaii.

But  ideally, My psyche needs green and water, temperatures cool, from a low 55 to a high of 75 max. I am such a limited gal, I know.  I am not much one for change although I like variables but not big, giant fluctuations.

I crave drizzles, mist and reading by the fire.  Unfortunately, we have been inundated not by moisture, but by hot, hot heat and plenty of sunshine.  Even the lizards cannot linger and are running for cover under leaves  –  the birds are flying in desperate searches for water sources and heading up… north.  Maybe sun worshippers are enjoying this but I am clearly done -stick a fork in me.  It is not even cooling hardly at night, yuk.

I am grateful for air conditioning, ice and all the comforts of home but when I step outside, I feel like I can’t breathe.

Y2 – Day 248 – Attitude and Elevation

As the most recent contestant, Willie, left the Master Chef show, he quoted his grandmother, “Attitude will always determine your altitude.”  I imagine this in reference to how your disposition decides how high you can achieve a dream.

Today, as our Hummel flies out of Germany, into Paris and then on to New York, I ponder determination, choices and aspirations.  Reach for the stars is an old slogan that bears revisiting.  I believe that the Universe conspires with you when you are committed to your vision.  And, if it is not meant for you in the scheme of things, it will not happen.  I also know, it never looks or unfolds, like you think it will, if it does come true.

Y2 – Day 247 – Germany Still

If you have been traveling with us, on V’s adventure, you know she is staying at hostels with just a backpack as she traverses Germany, with a bit of Austria.  She has one more day and she leaves and flies into Paris with enough time to see a few sights, she hopes.  Meanwhile, here is a German cat, an inside look at the beauty of a German hostel and a view from her room (hello, Virginia Woolf).

Last I heard, she visited Heidelberg, home to the oldest university in Germany and an old bridge with its famous castle displaying architecture from Gothic to Renaissance styles.  Plus her dad as a toddler and grandparents were stationed at the US military housing base there, many moons ago, so it is a trip through family history too.

And, this word just in, she arrived safely into Frankfurt am Main, a hub of museums and theatre.

Y2 – Day 244 – Alone Again

Our youngest chickadee left very early this morning for her sophomore year in college.  Here we are, alone again like two young twenty somethings.  Except we are smack dab in the middle of our fifties and have 5 pets living at home still.  Three cats, one doggie and one hamster.  I am quite content and look forward to our ‘alone again’ time.  I am even more madly in love with this man I call my husband than ever.

Today, cell phones abound and they are teeny and smart.  High definition and flat screens are de riguer and most everyone has upgraded to stainless in the kitchen.  The internet, the web, video calling, playing, chatting and movie watching is a common scene on small computers we call laptops or notebooks.  The world has really changed in the last twenty years or so, even more than at any other time.

Even between my son and my youngest daughter, a span of five and a half years, there is quite a difference in the exposure and face of technology but a lack of evolution on the human compassion scale and historical level.

The Simpsons and Seinfeld debuted in 1990.  The Hubbel Space Telescope is launched and quarks are confirmed as a reality.  Personal computers are still in black and green and white only.

By 1993, when V was born, the World Wide Web was also born.  Terrorism arrives and the first bombing of the World Trade Center happens, precursor to 9/11.  Rodney King and the LA riots resemble and predate Ferguson.  Humans are cloned.  Film can now be converted into digital bits and can be cut on a computer.

When my youngest arrived in 1995,  terrorism again struck in Oklahoma and OJ Simpson was declared not guilty.  Genetically manufactured produce is first being approved by the FDA and the White House launches its first web page.  Spamming becomes a thing as e-mail use starts to climb.  “You got mail” remember that?

Today, terrorism has destroyed the World Trade Center and continues to escalate around the world, OJ is in jail for a different crime but behind bars nonetheless, Family Guy and The Simpsons meet in the new season, everything is done it seems by computer like self-checkout at the grocery store, cloning, GMO’s and computer hacking is rampant and I actually got to see multi universes in photographs from the Hubbel Space Telescope in a New York museum near Ground Zero and I have been happily blogging on my very own website for over two years.

Will wonders never cease?

Alone again, but richer experiences.  Alone again, just us two, but with a lifetime of memorable moments, traditions and pictures of our three chickadees.  Alone again, a new phase, with a fun and wonderful future agenda illuminated by a full and rewarding past.

 

Y2 – Day 240 – V’s Germany Trip

V, my New Yorker, is in Germany for the next two weeks enjoying the country, vistas, sites, language, trains and FOOD!!!  She spent one month or so studying German at the University of Berlin, two summers ago. She is backpacking it now and living in youth hostels in each location.  She is living a dream and at 21 this is the time to do it!

Of course our first correspondence had to do with food.  She returned to a favorite ice cream parlor and had the best ice cream ever – Marzipan (almond).  Outside the Ice cream parlor – I guess EIS means ice.  Notice the passerby with cone in hand and bright yellow building in the background.  Trees in cities always makes them picturesque.

She also had the best falafel of her life she said.  It was prepared in this cozy kitchen and made to order.Fast food in Berlin

I will be reporting and posting on her whereabouts and experiences, sprinkled throughout my blog, for the next two weeks.

Y2 – Day 236 – Weekend!

It’s Friday!  Last day for the girls in their Berkeley abode.  They are on their way home!  Then one whole day with V and off to Germany and environs she goes!  One whole week with E and back to school for her.

It’s that time of year again when kids are coming and going in every family.  Back to school soon and the last few hurrahs of summer for most.  Teachers are revving up, books are being sold, classes are hopefully getting cleaned and the stores are stocked with stationery items.

 As I hug and hold and snuggle with my little chickadees again, I will cherish the precious, few moments and bless the tops of their sweet little heads.

Y2 – Day 224 – Weekend Bites, continued

I can count on one hand and name four places I frequent that are strictly vegan:  Native Foods, Veggie Grill, Free Soul Cafe and The Loving Hut.  Now I can add another.

Yesterday we found Healthy Junk, an eatery located at the Anaheim Promenade, a centrally located street that is closed down for pedestrians on weekends.

I was able to meet the owner, congratulate and thank her.  Her name is Lydna Santos and after personal cheffing over in Europe, she recently opened up her first dining spot in a bustling, busy, young and up and coming area.  Her parents were in the culinary international restaurant business and she credits them for influencing her aesthetics, dedication and standards of excellence.  She’s been vegan since 2004.

It’s great to find a place that caters to vegans but it’s even better to find a place so fabulously delicious too.

I began with a huge appetite, not having my usual breakfast and ordered a Caesar Salad, flatbread pizza with fresh tomatoes and basil and carrot cake.  Of course, I took most of it home, but also, I finished it all off by today.

I picked the Caeser out of 7 (seven) choices because it is rarely available to a vegan in a regular establishment.  It was dressed perfectly with a generous half avocado, sliced and fanned on top.  The croutons were crispy and the ‘cheez’ was a combo of nuts and nutritional yeast.

The flatbread pizza was so good, that it made me call over the owner and thank her.  The only other vegan pizza that was better, was the one at Gather in Berkeley (put it in Search Box and read about it).  But this place is closer to home and I cannot wait to eat my way through the menu.  All the pizzas are topped with house made Marinara and Mozzarella ‘Cheez”.

The Bunny Love moist cake was frosted and layered with a sweet vanilla filling and generously sprinkled with chopped nuts.  It was delightful and I just had a few bites, put it back into its carton for travel, and I tried to save it, but I ended up eating it all up, five minutes after we arrived home.

Y2 – Day 204 – Resort Supper

It is becoming a thing to dine well at the Lake Arrowhead Resort and bring Cindi.  The lobby is lovely and grand, the gift shop is nearby, it is more private and quieter than eating in the bustling restaurant, and Cindi can be lying peacefully by my feet on the new, clean designer carpet.Our Repast
