Y4 – Day 200 – A Quick Vegan Ice Cream

Vegan Soft Serve Ice cream

2 servings/Prep time: 5 min

This is a quick cold dessert to beat the heat or just as a treat. I usually have 1 or 2 bananas from a bunch that go ripe before I can or want to eat them so I peel them, cut them into thirds and place the cut portions in a freezer bag and freeze them for up to one month. It is a great way of not throwing out food and re-purposing it. Plus, it is delicious, and it is worth letting the fruit ripen just to have them handy for this protein, potassium packed, icy refreshment.

Ingredients

2 – 3 frozen bananas

¼ – ½ cup non-dairy milk to ease blending

2 Tbs. nut butter

1/2 tsp. vanilla extract

pinch of salt

sweetener

Directions

Place ingredients into a high speed blender and mix till everything is completely incorporated.

You can add 1-2 tsps. of cocoa if you like it chocolatey.

Change the extract flavor and experiment.

You can add mint extract and combine chocolate chips into the ice cream.

Try vegan cookie dough as an addition.

I like it with maple syrup and walnut butter and a few crushed walnuts on top.

Add fruit like strawberries and coconut butter for a tangy fusion.

 

Calories: 210/serving with ingredients listed. Add or delete calories accordingly if you are changing it up.

Y4 – Day 199 – Mason Jar Oats

Mason Jar Oats

Serves one/ Prep Time: 5 minutes/Total Time: 9-12 hours (overnight)

This easy mason jar recipe is ideal for breakfast on the go or a homey dessert. It works with so many combinations. I have added 1. Peanut butter powder instead of protein with peanuts, no raisins and 1 tsp of unsweetened cocoa. 2. Raspberries with pecans and cocoa, no raisins. 3. Blueberries with 1/2tsp.-1 tsp. cinnamon, walnuts and 4. Strawberries with ¼ cup unsweetened flaked coconut, 1 tsp. lemon juice, 1 tsp. lime juice, no nuts, no raisins and vanilla specks or powder.

Be creative or use my formulas.

Ingredients

¼ – 1/3 cup old fashioned oats or steel cut

2/3 – ¾ cup non-dairy milk

¼ – ½ cup berries, any kind or a mix

2 Tbs. nuts

1 Tbs. raisins (optional)

1 Tbs. protein powder(optional)

1 tsp. maca (optional)

pinch of salt

stevia or Splenda to taste

Directions

Just add everything in exactly the order of ingredients. Cover with the lid and shake. Refrigerate overnight. This lasts up to 4 days. When you are ready, just shake the jar, unscrew the lid and stir before eating, testing for desired sweetness.

 

 

 

 

Y4 – Day 198 – 5 Indoor Air Cleansers

Houseplants help adorn, uplift and clean your environment. Certain types are more effective than others. Many studies show that just viewing gardens, vegetation and natural plants relax and heal you both emotionally and physically. Here are five stars in the plant world that add greenery and renewable breath to your home.

  1. Peace Lily – this beautiful white flowered upright plant has dark, shiny leaves. It is decorative and easy to grow. It also removes acetone, trichloroethylene, benzene and formaldehyde from your home. Get one for every room and/or your office, especially if you have wall to wall carpet or new furniture. My husband has one now for twenty years in the lobby of his front office. We have one I divided and repotted from that same plant on our living room mantel.
  2. Corn Plant – also known as Dracaena Fragrant. If you need an effortless, attractive plant, look no further than this species. It’s leaves are variegated with centered, yellowish stripes that rise and then curve down in a waterfall shape.  It can grow to over four feet and looks great in corners, hallways and as a standout piece. In addition, it can save your life. It purifies benzene and cigarette smoke. I have one in the bedroom that I recently moved in from the top of the stairs hallway. Placed in a lightweight pot, they are a cinch to move around.
  3. Aloe vera – a true succulent every kitchen should have. Its sharp edged leaves are full of healing sap. Cut off a thick portion close to the center core and squeeze the gel on your skin for minor burns. It soothes sunburn. It can be taken internally to boost your immune system. It also vacuums out the formaldehyde in your environment. We have six huge aloes lining an edge of our yard because in S. California we don’t have to worry about frost. I trudge over and cut a leaf frequently whenever I accidentally burn myself. By the way, metaphysically, we burn ourselves when we are angry and lo and behold when I get a burn, I remember that and realize it is true. I was irritated at the time.
  4. Dwarf Date Palm – also known as Phoenix roebelenii. This slow growing palm likes to  have regular water maintenance. They also need to stay away from too much heat, light and any drafts in the home. Rinse their fronds by placing them out in the rain or bringing them into the shower to keep pests away. They might be a little needy but they also help eradicate gaseous poisons (xylene) released by paints. Rather than mollycoddle one indoors anymore, we have one in our front yard that originally lived inside our home. It is a very slow grower.
  5. Spider plant – one of the best plants that survive neglect pretty well and so they make great first plants for the budding new gardener. They love to propagate like crazy and falling spider plant babies make it a stunning hanging plant with variegated white and light green blade like leaves. I had an emerging jungle, sprouting from one plant, hanging all over my first apartment. They are perfect for a talkative family since they absorb carbon monoxide. Just take an outgrowing baby from an arched stem, cut it off and stick it in dirt or even a cup of water. It will develop roots within a week. They reproduce rapidly and are a wonderful gardening teaching tool.

I hope you find an incentive to embellish your indoor rooms with relatively undemanding living beauty that also cleans your atmosphere.

Y4 – Day 197 – fifteen years after

It’s frightening to think it was fifteen years ago today that we were bombarded on U.S. soil using our own planes as weapons to destroy our own buildings and people.

I remember the day well. I bet everyone alive then does.

It was a Tuesday. I wasn’t sure what was next so I kept the kids home.

To everyone whom has ever tragically lost a loved one because of terrorism or an act of violence, my prayers and love go out to you. I cannot imagine the pain. But, I can still sympathize and listen.

No one wins in war of any kind. It is inhumane. I wish we could all just use our words.

May love, compassion, forgiveness and kindness be our motto. Blessed be the day for me and mine. Blessed be the day for you and yours. All is well.

Y4 – Day 196 – Craft

Sometimes just by omitting or changing the color of the same form, the scene pops or soothes with ease or freshness. All roads lead inward and traveling on a path others may not take can lead to some of the biggest discoveries and inventions. Exploring outside the literal box is freedom. Making space and creating time for these endeavors are spiritual food.

M is always finding solution beyond the norm. He hung up the bamboo shades on our balcony that resolved the sun and privacy issue without impeding the view. I had never thought of that. It seems so simple after the fact.

There is brilliance in expanding. There is insight in openness. We must cultivate, invite and develop willingness in order to create with authentic flair.

We are each a unique kaleidoscope that sees life through its own prisms. One needs to pursue the calling and stay a dreamer, all in the same breath.

Y4 – Day 195 – The Power of Wonder

Wonder is Wisdom – Socrates

My pen feels smooth, effortless with deep and bold color. Cindi and I repose alongside each other. The treehouse is quiet inside but I hear wind chimes on the balcony. She is my precious, adorable therapy dog. I wonder how we got so lucky. Two souls meet in the ether and know they belong together. That’s how it was for us.

My daughter comes to visit and is in town. We make plans for the Norton Simon Museum in Pasadena. I have never been. The day before and unbeknownst to me, M takes a roll of film he found in his car out of nowhere and gets it developed. It’s a series of photographs my daughter shot when she went to the same exact museum with her Art History class in High School. Coinquidink? I think not. I wonder how we don’t connect the dots more often? I wonder what else am I missing because I am too worried, too caught up in the daily grind or too blind to see?

I often imagine myself in Oregon or some other colder, greener, gloomier state. I wonder how different life would have been if we had settled there back in 1993. I wonder why I love it when the weather is dark and grey. Why do I love the soft drizzle of raindrops?

You know there’s power in wondering, pondering, contemplation, right?

If I didn’t wonder I would miss the power in all of these details that make a life wonderful.

Y4 – Day 194 – Worming my Way Through

A box arrived the other day. I had to sign for it.

I held on to Cindi’s collar because she was barking at the delivery man as if she was a big, trained K – 9 German Shepard who just broke a murder mystery by barking at the criminal. She seriously thinks she is larger and meaner than she is. Too bad all you have to do is hand her a treat and any felon would walk right in the front door.

The package laid around for a few days. I was building up my courage to open it. I wrote it on my things to do today list I place on my kitchen peninsula for five days. I would check in with myself for any inkling of bravado every time I stopped by the kitchen to read my agenda and cross things off.

And then yesterday afternoon, I found some time and lots of hutzpah. I announced to my husband I finally decided to pull the trigger and open it.

Four days prior, I had looked up directions. I was convinced I could not do this without lots of support. M asked if he could help, “I do this all the time.”

“No.” I answered. “I’ll figure it out.” I presumed. “I’ll get frustrated and it won’t be good.” Knowing how controlling, territorial and stubborn I am. Just like Cindi. I swear she is me, in dog form.

Besides, whenever we try to follow directions, build items with parts and instructions or learn how to use a new tech gadget, it turns into a disaster. Someone’s feelings always get hurt.

No. I knew this was something I had to do in seclusion.

I found a razor and opened up the parcel. I pulled out the wrapped gift and peeled the plastic off. I slit the transparent tape with my blade. I lifted the lid carefully.

I reread the instructions I had printed out. I dreaded ruining the whole transaction. I plugged it in. It asked for a username and my password.

Two and a half hours later, all of my information was simply transferred from my first device. It practically did it all itself.

And now, I am typing on a brand new, enhanced speed, super charged, boosted laptop. I didn’t lose a single email. I installed Word 2016 by myself, tonight.
